°1 small onion chopped
°454 g (1 lb) chicken, cooked and coarsely chopped
°10 ml (2 teaspoons) taco seasoning
°2 cups (500 ml) chopped tomatoes (canned)
°250 ml (1 cup) black beans
°10 taco shells
°250 ml (1 cup) Mexican Armstrong Fiesta cheese, grated
+Extras of your choice
°sour cream
°sliced iceberg lettuce
°green onion
°coriander
°Jalapeno pepper seasoned
* Directions :
Heat the oven to 200°C (400°F).
In a large skillet over medium heat, saute the onions in the oil, stirring, for 2-3 minutes. Add chicken meat and spices and stir again. Reduce the heat, add the tomatoes (do not drain) and beans and cook, stirring occasionally, until the liquid has evaporated.
Put the crust in a baking dish and decorate with the mixture. Sprinkle the crust with Mexican Fiesta Armstrong cheese and bake in the center of the oven for 8 minutes or until golden brown. Served with your choice of garnish.
