°900g of early potatoes
°1 piece(s) leek(s)
°0.5 bunch parsley
°3 cl of sunflower oil
°6 pinch(s) fleur de sel
°6 tower(s) of pepper mill
°180 gm unsalted butter
°tomato 3 pieces
°1 piece(s) of garlic clove(s)
°5 grams of Provence herbs
°1 olive oil
°3 pinch(s) of fine salt

* Preparation :

*To prepare garlic butter

Chop garlic, shallot and parsley.

Let the butter melt at room temperature until you get a consistency called a "ointment." Then add the garlic and shallots, then half the chopped parsley.

Spread the butter with a spoon, then wrap the mixture in plastic wrap to form the sausage. Then keep it in the refrigerator.

For tomatoes and potatoes

Heat the oven to 200°C. Place a cast iron skillet to heat.

Cut the tomatoes into 2 slices. Salt and pepper, sprinkle with olive oil, then sprinkle with herbs from Provence.

Cut the garlic into slices using a mandolin, then put a slice on each tomato.

Bake the tomatoes for 20 minutes, until toasted.

Boil the potatoes in salted boiling water for 10 minutes. Drain and let cool, then cut into two pieces.

Heat a frying pan with sunflower oil spray. Once the oil is hot, place the potatoes cut-side up in the skillet, then let them brown.

Then remove from the heat and finish cooking in the oven for 10 minutes. When leaving, season with flowers and sprinkle with parsley.

To cook the entrecote

Add a little fleur de sel, then pour in sunflower oil.

Put the meat on the grill and turn it only once, once it is cooked to your liking. Then leave it for a few minutes.

Serve the meat with garlic butter slice, French fries and tomatoes.

Enjoy !
