Good Ole Mac and Cheese


This baked pasta recipe has been loved in our family for a very long time. I don't know where it came from, but all I know is that year after year, every bite is eaten with equal enjoyment...


*Ingredients :

+Servings: 6
°450gm fusilli or rotini pasta
°1/4 cup ghee
°1 c. Dried minced onion
°1/4 cup all-purpose flour
°2 cups of milk
°120gm of processed cheese (Cheez Whiz style)
°1/4 cup crumbled blue cheese
°1/4 cup cheddar cheese, cubed
°1 c. salt
°pinch of black pepper
°1/4 tsp. 1/2 teaspoon dry mustard


*Preparation steps

Preparation: 15 minutes › Cooking: 35 minutes › Preparation: 50 minutes

Fill  saucepan with lightly salt water & bring to boil on high heat. Add pasta, stir and bring to a boil. Cook pasta, uncovered, stirring occasionally, until cooked through; About 12 minutes. Drain in a dish rack placed in the sink.
Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
Melting butter in  saucepan on  medium heat. Saute onions until translucent, about 5 minutes. Add flour and cook for another minute, stirring. Slowly pour the milk into this mixture, whisking constantly. We add 3 types of cheese, salt, pepper and mustard. Cook over low heat, stirring, until cheese melts and sauce becomes smooth. Combine pasta, stirring, then pour fusilli and sauce into a gratin dish.
Bake in preheated oven until gratin is nice, about 20 minutes.
