Southern Candied Sweet Potatoes

Served with dessert, sweet potatoes are just as delicious in our recipe. The roots are sweetened in hot syrup before served cold with coconut ice cream: the perfect winter dessert!

*Ingredients :

°600g yellow sweet potato
°200 grams of brown sugar powder
°6 tablespoons. Maple syrup
°1 star anise
°1 cinnamon stick
°2 vanilla bean
°60 cl of coconut ice cream (or sherbet)

* Steps :

Peel the sweet potatoes, rinse and pat dry. Cut it into slightly thick slices.
Split the vanilla bean lengthwise and scrape the inside with the tip of a knife to collect the tiny aromatic black seeds.
Put them in a saucepan with the sugar, maple syrup, anise and cinnamon. Add 70 cl of water and bring to a boil.
Pour the potatoes into this boiling syrup and let them have the dessert (still cooked), about 30 minutes (their flesh should be tender under the tip of the knife). Pour the contents of the pan into a deep dish and let it cool.
Serve cold (but not frozen) in glasses with a spoonful of coconut ice cream.
