Banana Cake recipe

*Ingredients (6 people):

I saw this cake in a book "the good flavors" of Atlas editions;

-50g of dark chocolate shavings (the 75g package is fine for me :] )

-2 bananas

-1 case of rum (I like replaced by banana liqueur)

-1 tsp of vanilla extract

-2 sheets of gelatin

-3 eggs

-20 cl of liquid fresh cream

- butter for the plate (mold)

-200g caster sugar

-60g of flour

-60g of potato starch

-1 case of baking powder

-1 pinch of salt

For an 18 cm diameter mold with removable bottom.

Preperation:
1) COOKIE DOUGH: Whisk 3 egg yolks with 3 cases of hot water. When the mixture becomes foamy, add 100g of sugar and whisk for 5 minutes. Whip 3 egg whites until stiff with a pinch of salt.

2) THE FINISH: using a spatula, mix the egg whites with the yolks and the sugar. Gently stir in 60 g of flour, 60 g of starch and 1 case of baking powder.
Preheat the oven to 200°C. (th. 7).

3) THE COOKING AND THE SYRUP: Spread the preparation in a buttered baking sheet (mold for me). Bake for 12 minutes. Unmold the cookie.
Boil 100g of sugar in 10 cl of water. Out of fire add 1 case of rum (or other).

4) DISCS IN BISCUITS: Cut 2 discs of 18 cm in diameter in the biscuit. Install one of them at the bottom of a mold of the same diameter. Brush it with syrup using a brush. Sprinkle with 25 g of chocolate shavings. (+ for me:]).

5) BANANA PUREE: Brush the second disc with syrup. Stir 2 sheets of gelatin into the rest of the syrup. In a blender, mash 2 bananas. Flavor with 1 tsp of vanilla extract. Mix the puree with the syrup.

6) ASSEMBLING THE BAVAROIS: Whip 20 cl of liquid cream into whipped cream, Mix it with the banana puree. Pour the resulting mousse into the mold. Cover with the biscuit. Sprinkle with 25g of chocolate shavings. Refrigerate 24 hours.
