CheesyBroccoli Chicken Breasts


°5 boneless, skinless chicken breast
°1 tsp olive oil
°2 tsp Italian season
°1 tsp garlic powder
°1/2 tsp onion powder
°2 cups broccoli florets, chopped
°1 tablespoon of water
°1/2 cup  cheddar cheese
°1/4 cup low-fat cream cheese
°1 tablespoon Dijon mustard
°1 clove garlic, minced
°Salt and pepper


To steam the broccoli: Cut the broccoli florets into small pieces. Putting all broccoli in microwave-safe bowl & for 2 tsp of water. Add water. Cover with plastic wrap and microwave on high power for 2-3 minutes. Alternatively, steam on a stove top or blanch in boiling water for 1 minute.
Use a sharp knife to slice each chicken breast horizontally to form a pocket. Make sure you don't stop cutting about 1/2 inch from the ends and sides. Season the chicken breasts with a generous pinch of Italian seasoning, garlic powder, paprika, salt and pepper.
In a large bowl, combine steamed and chopped broccoli, bell pepper, garlic, cheeses and salt & pepper; put aside. Spoon mixture evenly into each chicken breast. Secure with toothpicks if necessary.
Preheat the oven to 400F. Heat 1 tablespoon of oil in a large cast iron or ovenproof skillet over medium-high heat. Add the chicken breasts and cook 2 to 3 minutes on each side or until browned. Cover with foil and transfer to preheated oven for 15-20 minutes
