Marinated beets



*INGREDIENTS

   °10 lb beets
   °1 cup water
   °2 tablespoons coarse salt
   °2 1/2 cups sugar
   °5 cups white vinegar


* PREPARATION

STEP 1
Boil the beets until tender (30-45 mins).

2NDSTEP
Filter and keep 1 cup of cooking water.

STEP 3
Drain the beets, peel them and cut them to taste (in slices, quarters or whole).

STEP 4
Heat cooking water, salt, sugar and vinegar over medium/high heat until sugar is completely dissolved.

STEP 5
Sterilize 4 jars of 1 liter (or the equivalent in jars of 500 ml.) and fill them with beets.

STEP 6
Pour the liquid up to the edge of the jar and seal well.
