No Bake Banana Split Dessert

Discover my recipe for express and no-cook banoffee. When you mix bananas, caramel and whipped cream you get a delicious banoffee! Here I made a simplified individual version without cooking.

For the crust:
°250g speculoos
°80g of butter
For the cheesecake:
°150g fresh cheese (Philadelphia or St Môret type)
°100g cottage cheese
°100g liquid cream
°50g of sugar
°2 ripe bananas (130g)
°3 sheets of gelatin
°1 case of ratafia champenois (or bourbon)
For the decoration:
°5cl full cream
°1 small young banana (not a very black one)
°1 case of milk jam
°1 tsp of ratafia champenois
°2 cases of crushed pecans

Line an 18cm springform pan wiith stretch film.
Let the gelatin soak for 15 minutes in cold water.
Prepare the crust: finely grind the speculoos to form a powder. Moisten with melted butter.
Mix this mixture in the springform mold by pressing it down with your fingers or a stainless steel ring pusher.
Leave to hardene in refrigerator.
Prepare the cheeecake: whisk the cream cheese with the cottage cheese, sugar and mashed bananas.
Gently heat the cream. Add the gelatin to melt. Mix well and remove from heat.
Add the cream to the previous mixture with the ratafia champenois.
Pour the preparation over the speculoos crust. Letting to set for at least 3 h in fridge.
Decoration: place the cream in a high-sided container for 15 minutes in the freezer.
Cutting fresh banana to slices. Sprinkle them with lemon juice to prevent them from blackening.
Mix the milk jam with the alcohol to thin it.
Whip the whipped cream very firm.
Carefully unmold your cheesecake onto its serving platter.
Pre-cut the slices. Count 8 to 12 parts.
Using a pastry bag, form tufts of whipped cream along the speculoos crust. Plant one slice of banana per clump.
Coat the center of the cheesecake with the milk jam and cover with chopped pecans.
Serve immediately.
