*INGREDIENTS
°4 large avocados, pitted and halved (skin on)
°1/2 cup sour cream (full fat)
°1 tbsp lime juice
°3/4 tsp salt, divided
°1 tablespoon extra virgin olive oil
°1/2 cup red bell pepper, diced
°1/4 cup white onion, diced
°1/2 lb lean ground beef
°1/4 cup salsa (prepared)
°2 teaspoons ground cumin
°1 teaspoon chilli powder
°1/4 cup fresh cilantro, chopped
*DIRECTIONS
Scoop 2 to 3 tablespoons of flesh from the bottom of each avocado half, keeping the rest of the flesh intact.
In a food processor, combine the excised meat, sour cream, lime juice and 14 tbsp. salt. Puree until smooth, then set aside.

Heat the oil in a medium skillet over medium heat. Sauté for 3 minutes with the pepper and onion.
Cook for 8 minutes, breaking up the meat with a spoon as it cooks.
Add salsa, cumin, chili powder and remaining 1/2 teaspoon salt.
Cook again for 3 minutes or until cooked through.
Stir in cheese.
Fill the avocado halves with the filling and drizzle with an avocado and sour cream mixture. cilantro on top
