*Ingredients:
°6 cups of chicken broth
°2 celery ribs, broken in half
°1/2 medium onion (keep it like a piece of onion)
°1 lb boneless, skinless chicken breast
°3 c flour
°1 tsp baking powder
°1 1/4 tsp salt
°1 cup + 2 tablespoons of milk
°Salt and pepper to taste
*Instructions
In pot or Dutch oven, add the broth, celery, onion and chicken breast.
Bring to boil, then lower heat & simmer, partially covered, for 15 min, to chicken breast is cook through. When chicken cooks, preparing meatballs.
In a medium bowl, combine flour, baking powder and salt. Stir in milk until combined into a fluffy batter.
Turn the dough out onto a floured surface and roll out to about 1/4 inch thick.
Use a pizza cutter to cut the dough into strips or squares about 1 to 2 inches.
Once the chicken is fully cooked, place it on a cutting board. Remove the piece of onion and the pieces of celery and discard them.
Add the dough strips to the simmering broth and simmer for about 20 to 30 minutes, stirring occasionally, allowing the dumplings to cook and the broth to thicken until they reach a consistency similar to that of 'a sauce.
While the meatballs simmer, shred or chop the chicken and return it to the pot.
Season with salt and pepper to taste, then serve hot.
