MEXICAN CASSEROLE


*Ingredients:

°1 pound lean ground beef
°1 can of ranch-style beans
°1 bag 10-12 oz tortilla chips, crushed (I didn't use the whole bag)
°1 can Ro-tel tomatoes
°1 small onion, chopped
°2 cups shredded cheddar cheese, divided
°1 package taco seasoning
°1 can cream of chicken
°1/2 cup of water
°sour cream and salsa for serving

*How to do it

Preheat the oven to 325 degrees. In a large skillet, brown the meat and drain the fat. Stirring in beans, tomatoes, onion, taco season, soup & water. Simmer on medium-low heat to well mixed and heated through.
Greased 9×13 casserole dish. Lay down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers. Covering with foil also baking for 20-30 min
Let stand 5 to 10 minutes before serving. Topping with sour cream & salsa.
